What is the best software to create pdf book summaries?

I need a software with which I could copy and paste text from a pdf file to a text file. I've tried using MS Word 2000, but it messes-up whole structure of the original text? Adobe Acrobat also wasn't the answer.What is the best software to create pdf book summaries?Office suit 2000 cannot remember source formatting or cant do a proper format conversion, use Office XP onwards any version and you can do this.
